Coconut Tart

If this upcoming 1st Sunday  of May you cannot afford buying your mom a Mother's day gift this super easy and economical tart with a truly decadently delicious soft filling and crisp pastry will make the delights of your mother/daughter/son get-together.A rich slice is true comfort food, besides the fact it will surely make a lovely dessert centerpiece at your mom's table! Enjoy!

  • 300g sugar
  •  4 eggs
  •  100g self-rising flour
  •  80g grated coconut
  •  1 puff pastry sheet
  •  125 ml water
  •  sugar dusting powder

In a pot, boil water with sugar. Beat the eggs with the flour and coconut and add the sugar with the water. Line a tart mould with a puff pastry sheet and prick the bottom with a fork. Take to a preheated oven at 180 ° until set and browned on top.

  • 300g açúcar
  • 4 ovos
  • 100g farinha com fermento
  • 80 g côco ralado
  • 1 folha de massa folhada
  • 125 ml água
  • açúcar em pó para polvilhar
Num tacho ferver a água com o açúcar. Bater os ovos com a farinha e o côco e juntar o açúcar com a água. Forrar uma tarteira com uma folha de massa folhada e picar o fundo com um garfo. Levar a forno pré aquecido a 180º até solidificar e ficar dourada por cima.
