In The Mood For

January always seems endless to me - the constant grey skies, the low temperatures, people busy trying to keep track of time with both their lives and new year's resolutions, having to get out of bed when it's still chilling and so dark outside, coming home from work in the end of the afternoon and not having enough natural light to photograph  - but it's finally come to an end, which somehow is reconforting considering we are now a step further to get into spring faster. And I realize that, sometimes, just a happy, comforting thought  is enough to get us through tougher days! I'm in the mood for...

Spicy Tuna Spaghetti


I love anything that remotely resembles Italy, one of my crush countries for sure, so that's no surprise that whenever I have the chance I cook any kind of pasta. This time I decided to use red wine with this dish because I had no white wine at home by the time every ingredient was alredy in the frying pan and I have to tell you that there was absolutely no disappointment in the result. It tasted deliciously, the aroma in the kitchen was incredible and this will be a dish to repeat often for certain.


Ingredients:
  • 2 cans of tuna fish
  • extra virgin olive oil
  • 1/2 an onion
  • 2 garlic cloves
  •  ground chilli
  • 1 packet of bacon
  • 1 can of mushrooms
  • 1 glass of red wine
  • spaghetti
  • 1 packet od butter with herbs [I use Mimosa's]


In a pan boil the spaghetti al dente in water, salt and a packet of butter with herbs. Set aside. In a frying pan with xtra virgin olive oil put the onion and the garlic cloves cut into very small pieces until slightly golden. add a pinch of salt and of ground chilli. Then add the mushrooms and the bacon until they get almost caramelized. Finally add the tuna fish, pour the glass of wine and let cook for about 10m before serving immediately with the pasta.

Cinammon Pancakes


Pancakes and roses are the perfect combination for dull winter mornings that call for comfort food and some home beautification. Cinammon is one of the spices I to which I turn to often during the cold months mainly because of its intense, warm, woody scent  and accentuated bitter, spicy flavour that, when mixed with the sweeteness of sugar become instant perfect partners. For cinammon lovers like me this cinammon pancakes are the best treat to star the day off on the right foot!


Ingredients:
  • 2 tea cups flour
  • 1/2 tea cup brown sugar
  • 1/2 tea cup dark borwn sugar
  • 1 egg 
  • 2 tea spoons of goround cinammon
  • a pinch of salt
  • a tea spoon of baking powder
  • a cup of milk 
  • honey
  • nuts
