For me any excuse is good enough to have cake at home - a rainy day, a pleasant evening, the movies marathons at the weekends, the visit of a friend, a family gathering and this time in particular great citrus at the local market! This super easy-to-follow recipe was born the minute I saw them orderly exposed in the thin wood boxes, bursting in vibrant colours. My mind wouldn't stop finding a way to bring their bitter, sour-sweet flavor to a baked good. It resulted beautifully - the grapefruit announces it’s presence but not too brashly and the tang of the lime adds a slightly tropical zing to a cake that besides delicious, smells wonderfully!
Ingredients:
- 6 eggs
- 2 cups flour
- 1 tea spoon baking powder
- 1/ tea cup sunflower oil
- 1 1/2 cup sugar
- juice of 1 grapefruit
- juice of 2 limes
- powder sugar to sprinkle
