One Egg Cake

It was the day of a shared lunch at my workplace and I had  committed myself to bake a cake. I was chilling in the morning, thinking that everything was controlled, I hadn´t even given myself the trouble of checking if I had the required ingredients at home, so I spent tmost of the morning cleaning the house. Note that I also had no car that day, as it was at the mechanic's to do the oil  and filter change. So when the time to bake the so long expected cake for my co-workers, I came upon the ridiculous scenario of having  only one egg at home, inside the cardboard box . Panicking, I researched recipes for cakes that would take only one egg, but they seemed a bit tasteless, so I decided to dump the pantry and use what I had in terms of ingredients that would combine well.I could not have had a better outcome than this yummy ,scented, simple cake with a very rich flavor that even made more success by having taken just one egg!

Ingredients:
  • 1 egg
  • 40 ml liquid butter
  • 2 mugs of flour
  • 1 mug of light brown sugar
  • vanilla extract
  • a tablespoon of honey
  • 1 cup of milk
  • powdered sugar and a cup of strong coffee for the ganache

Beat the egg. Add the light brown sugar and beat. Add a cup of milk and beat. Add the liquid butter and beat. Add the flour and a few drops of vanilla extract and beat again. Finally, add a tablespoon of honey and beat. Take to a pre-heated oven at 180 º for about 30m. Make the ganache coffee with a cup of tea full of powdered sugar and add a cup of strong coffee. Pour into the cake when it is already unmolded.

Bater o ovo. Adicionar o açúcar mascavado claro e bater. Juntar uma caneca de leite e bater. Juntar a mantiga líquida e bater.

Juntar a manteiga líquida e continuar a mexer. Fazer o teste do palito.
