Under penalty of being considered a braggers or cocky I'd venture to say that "caldo verde" is one of my expertises , regarding soups. Maybe because it is one of my favourite soups I have improved its cooking that is required to be in the precise cooking time - a broth nor too watery, neither very dense, but rather creamy and with an intense tasty flavour , where the various ingredients merge, without however losing their own individuality.
Ingredients:
- 500g kale
- 2l water
- 600g potatoes
- salt qs
- chorizo
- 2dl extra olive oil
Put water and salt to boil in a large pot. Once it starts to boil place the peeled and cut into chunks potatoes . Once cooked mash them in the cooking water , then adding the Kale cut into very thin slices after thoroughly washed in two or three waters. Add the sliced chorizo, pour the olive oil and bring to a boil for about fifteen minutes with the pan uncovered . Serve steaming!
Sob pena de ser considerada uma gabarolas ou convencida arrisco a dizer que o caldo verde é uma das minhas especialidades, no que concerne as sopas. Talvez por ser a minha favorita me tenha aprimorado mais na sua confeção que se quer no ponto certo - um caldo nem demasiado aguado, nem muito denso, mas sim cremoso e com um sabor bem apurado, onde os vários ingredientes se fundem, sem, contudo, perder a sua individualidade.

- 500g couve galega p/caldo verde
- 2 l água
- 600g batatas
- Sal Grosso q.b.
- chouriço extra
- 2 dl azeite
