Rustic Apple Cake


Wandering through the countryside near my house, peering the natural landscape, letting me go aimlessly, going ou for great walks early in the morning while it does not rain, harvesting wild flowers and bringing them home is one of my favorite activities whenever I can . Naturally, to return home to take breakfast and to know that a warm kitchen awaits me due to the oven that was left turned on as well as a delicious and rich cake in these very cold and windy autumn morning, makes the return even more appealing!

Ingredients:

  • 8 eggs
  • 2 cups of sugar
  • 1 tea cup of sunflower oil 
  • 1 tea cup of milk
  • 2  and 1/2 cups of flour 
  • 1 teaspoon of baking powder
  • 7 apples
  • 1/2 lemon, juice and zest
  • light brown sugar
  • 2 tablespoons cinnamon 
  • butter and flour for greasing

Peel the apples. Cut half the apples into halves and the other half into quarters after having cleaned them from seeds and drizzle tehm with the lemon juice, brown sugar and cinnamon. Mix everything well and reserve. Separate the yolks from the whites, into different bowls. Beat the egg yolks with the sugar until the dough is light and fluffy. Add oil and beat again. In a separated bowl add the flour and the baking powder. Stir in the  yolks and whisk. Whip the egg whites and gently wrap the dough in rotary motion, from top to bottom. Pour a layer of the batter into the pan greased with butter and dusted with flour. Line the top of the batter with the sliced apples. Lay another layer of dough on top. Alternate with another layer of dough and apple. The latter layer must be of apple. Take to bake into a preheated oven at 175 ° C for about an 1 hour.


Deambular pelo campo perto de minha casa, perscrutar a paisagem natural, deixar-me levar sem destino certo, dar grandes caminhadas cedo pela manhã enquanto não chove, colher flores selvagens e trazê-las para casa é uma das minhas atividades favoritas, sempre que posso. Naturalmente, que regressar a casa para tomar o pequeno-almoço e saber que me espera uma cozinha quentinha pelo forno que ficou ligado e um bolo delicioso e farto nestas manhãs muito frias e ventosas de outono, torna o regresso ainda mais apetecível!


Ingredientes:
  • 8 ovos
  • 2 canecas de açúcar
  • 1 chávena de chá de óleo de girassol
  • 1 chávena de chá de leite
  • 2 e 1/2 canecas de farinha 
  • 1 colher de chá de fermento 
  • 7 maçãs
  • 1/2 limão , sumo e raspa
  • açúcar mascavado claro
  • 2 colheres de sopa de canela
  • Manteiga e farinha para untar a forma

Descasque as maçãs. Parta metade em meias luas e outra metade em quartos depois de limpas de sementes, e regue com o sumo de limão, o açúcar mascavado e a canela. Misture tudo muito bem e reserva-se. Separe as gemas das claras, para taças diferentes. Bata as gemas com o açúcar, até a massa ficar clara e fofa. Adicione o óleo e bata de novo. Numa taça à parte junte a farinha e o fermento. Junte o preparado das gemas e bata. Levante as claras em castelo envolva suavemente na massa em movimentos rotativos, de cima para baixo. Deite uma camada de massa na forma previamente untada com manteiga e polvilhada com farinha. Forre o topo da massa com a maçã fatiada. Deite uma nova camada de massa por cima. Alterne com outra camada de maçã e massa. A última deve ser de maçã.Vai a cozer a forno a 175°C durante aproximadamente 1h.
