These past weeks of constant heavy rain and very cold weather asked but for comfort food on a regular basis. This is a much appreciated dish around here not only because it's made of chicken, my favourite meat, but also because it is full of potatoes and carrots, a delicious sauce basis and it is somewhat spicy and very tasty. This easy-to-follow, hearty and homemade recipe will certainly warm up your soul. Will you give it a try?
Ingredients:
- a chicken
- extra virgin olive oil
- 2 onions
- 3 garlic cloves
- tomato sauce with herbs
- salt
- 2 cups white wine
- onions
- potatoes
- white wine
- chili
Heat the oil in a pan over medium heat. Add
the garlic cloves, the chopped onions and the chili. Saute the vegetables until the onion and the garlic are
translucent, about 5 minutes. Season with salt to taste. Add the chicken and press to submerge.
Bring the cooking liquid to a simmer. Add the white wine. Add the cut carrots after about 10 minutes. Reduce the heat to medium-low
and simmer gently uncovered until the chicken is almost cooked through,
turning the chicken over and stirring the mixture occasionally,
about 25 minutes. Finally add the cut potatoes and let them boil until cooked.
