Blackberries Greek Yoghurt Cake


I confess that I am not fond of yogurts at all; even when I was a kid, I have never asked my mom to buy them and it puzzled me to watch my friends eating them daily without fail. Now , if we are talking about a yoghurt cake, that's another story! The creamier consistency and fuller flavor of the Greek yoghurt make it ideal to be joined to the other ingredients and the fact that this one has blackberriesgives it a very peculiar aftertaste after baked . This rustic looking cak , but which is truly appetizing is great for sunnier mornings at last and is an invitation to a morning degustation full of  pleasure.

Ingredients:

  • 1 cup flour
  • 1 cup of corn starch
  • 1 cup of sugar
  • 4 eggs
  • 1/2 cup of sunflower oil
  • 1 teaspoon baking powder
  • 3 Greek yoghurt with blackberries

In a bowl beat the eggs and sugar with the sunflower oil until you have kind of a foam . In a separate bowl add the flour , cornstarch, baking powder and mix well with a wooden spoon. Pour the yogurts in  eggs dough and beat again. Pour everything into the container with the flour and beat well until the mixture is homogeneous. Take it to a preheated oven to 180 º for about 40m ( do the toothpick test ).



 Confesso que não sou nada apreciadora de iogurtes, mesmo em pequena, nunca pedia à minha mãe para os comprar e fazia-me alguma confusão ver as minhas amigas a devorá-los diariamente sem falhar. Agora, se falarmos num bolinho de iogurte, isso é outra conversa! A consistência mais cremosa e o sabor mais intenso do iogurte grego é ideal para se juntar aos outros ingredientes e o facto deste ter amoras dá-lhe um travo muito peculiar depois de confecionado. Este bolo de aspeto rústico, mas verdadeiramente apetitoso é ótimo para as manhãs que nascem finalmente  mais solarengas e que são um convite a uma degustação matinal cheia de prazer.

Ingredientes:
  • 1 chávenas de farinha
  • 1 chávena de amido de milho
  • 1 chávena de açúcar
  • 4 ovos
  • 1/2 chávena de óleo de girassol
  • 1 colher de fermento
  • 3 iogurtes gregos com amoras
Numa taça bater os ovos com o açúcar e o óleo até formar uma espuma. Num recipiente separado juntar a farinha, o amido de milho, o fermento e envolver bem com a colher de pau.  Deitar os iogurtes no preparado dos ovos e bater de novo. Verter tudo no recipiente com a farinha e bater bem até a mistura ficar homogénea. Vai a forno pré-aquecido a 180º cerca de 40m ( fazer teste do palito).
