Lime Zest Swiss Roll


This is an airy recipe that is great for Springtime. The cake is light with a yummy tasty milk chocolate frosting. The richness of this topping, sweet and indulgent, is balanced by the addition of the refreshing lime zest and juice to the fluffy texture of the dough. The twist of the amazing homemade plum jam I had kept from last summer [believe me you could eat it by the spoonful] for the filling is an unexpected but delightful surprise to mixture of these flavours - I'm a risk taker with almost no regrets! If like me you love entertaining and want to have a nice treat for your guests this super easy cake  will gather the perfect combination of sweet and citrus.

 Ingredients:
  • 6 eggs
  • zest of 3 limes
  •  juice of 2  limes
  • 200gr sugar
  •  200g flour
  •  homemade plum jam
  •  milk chocolate

Separate the yolks from the whites and whisk the egg whites. Reserve the whites. Beat the egg yolks with the sugar and the zest of the limes. Then add the juice of the limes and whisk again. Add the flour and whisk, then add the whisked egg whites. Pour into the oven in a tray lined with non-stick baking paper and allow to bake at 190 ° C for 15 minutes. Remove from oven and turn over onto a clean kitchen cloth, sprinkled with sugar. Spread the
homemade plum jam  generously on the cake . Wrap carefully with the help of a cloth sprinkled with sugar, squeezing well. Allow to cool.   

                                                                                                                                                              
Ingredientes:
  • 6 ovos
  • raspa de 3 limas   
  • sumo de 2 limas
  • 200gr açúcar
  • 200g farinha
  • doce de ameixa caseiro
  • chocolate de leite

Separe as gemas das claras e bata as claras em castelo. Reserve as claras . Bata bem as gemas com o açúcar e com a raspa das limas. Adicione depois o sumo das limas e bata de novo. Junte a farinha e bata, depois envolvendo as claras batidas em castelo. Verta dentro do tabuleiro do forno, forrado com papel vegetal anti-aderente e leve a cozer a 190ºC, por 15 minutos. Retire do forno e desenforme sobre um pano de cozinha lavado, polvilhado com açúcar.  Barre o bolo generosamente com o doce de ameixas caseiro. Enrole cuidadosamente com a ajuda do pano polvilhado com açúcar, apertando bem. Deixe arrefecer.

  2. Tem mesmo bom aspecto, comia uma fatia ou duas. Fizeste doce de ameixa no Verão passado e aguentou-se até agora? Como é que conseguiste, tens de me dar a receita que eu já deixei estragar dois potes de doce por não os querer comer logo a ver se duravam e nunca duram mais que uma ou duas semanas.
