For these days that turned to be gray and cold once again, a spring that is seen has being constantly postponed and a nearby summer from which we do not see a single sign of, nothing better than a comforting recipe, which suits both breakfast or afternoon snack, based on a recipe [you already know that I always like to add an extra something on the original recipes] I saw on a program of my latest "chef girl crush", the incomparable Lorraine Pascale. I do not have her cooking books yet, but they are already in the first row of the list of things to purchase as soon as possible! Appetizing, tasty, delicious ... help yourself!
Ingredients:
- 2 sheets of puff pastry
- 4 yellow apples
- dark brown sugar
- cinnamon
- butter
- powdered sugar for sprinkling
- cast sugar
- 1 egg for brushing
- quince jelly to glaze
- 1 lemon - zest and juice
- White Port
Peel the apples and cut them into small cubes. In a frying pan put 2 tablespoons of butter to melt. Add the apples, two tablespoons of dark brown sugar, a tablespoon of granulated sugar, a pinch of cinnamon powderor as much as you please and stir gently. Then, add the zest of one lemon and also its juice [I did not put all the juice] and two teaspoons of White Port wine. Let ascertain stirring occasionally, about 15 minutes. Cut the sheet of puff pastry into strips, brush with eggwash on the inside to join the edges, place the apple mixture in the center of the puff pastry and then close all the outer edges with the help of two fingers, poking the cookie in the center with the help of a fork. Take it to a pre-heated oven at 180 º until golden. Remove and while still hot, brush over with jelly. Finally sprinkle with powdered sugar- as much as you like it.
