Lemon Curd


I'd been thinking about attempting a lemon curd recipe for a while , a versatile jam that can be used both as a filling or topping for cakes , pies and tarts, as a base for other desserts or simply to spread over sandwiches , croissants or scones. For lovers of  acidic flavors like me, this is the ideal dessert , even  to offer friends , as was the case !

 Ingredients:
  • juice of 6 lemons
  • zest of 6 lemons
  • 500g Sugar
  • 150g unsalted butter (I used Mimosa ) 
  • 6 eggs


 
In a pan , put the sugar , lemon zest , butter and lemon juice . Bring to the boil and allow to melt , stirring occasionally . When it starts boiling , simmer for 3 minutes . Then let it cool about 8 minutes. Then , break the eggs into a bowl and beat well with a wire rod . The secret is here, I think. Gradually , and as you beat , slowly add the syrup  , always beating vigorously between each portion of the syrup that is being added to the eggs, so that it doesn't curdle. Put back in the pot . Cook over low heat stirring constantly ( this step is extremely important! ) until thickened .Turn off the heatbefore it starts to boil . Let cool for about 10 to 15 minutes. Store in jars that close well . When cold , store the jars in the fridge .




Andava há já algum tempo desejosa de experimentar o lemon curd, um doce versátil que pode servir de cobertura ou recheio para bolos, tortas e tartes, como base para outras sobremesas ou simplesmente para barrar pão, tostas, croissants ou scones.Para os amantes dos sabores ácidos como eu, este é o doce ideal, até para oferecer às amigas, como foi o caso!



Ingredientes:
  • sumo de 6 limões
  • raspa de 6 limões
  • 500g de açúcar
  • 150g de manteiga sem sal (usei Mimosa)
  • 6 ovos

 Num tacho, coloque o açúcar, a raspa de limão, a manteiga e o sumo de limão. Leve ao lume e deixe derreter, mexendo de vez em quando. Quando começar a ferver, deixe ferver durante 3 minutos. Depois, deixe arrefecer cerca de 8 minutos. Então, parta os ovos para uma tigela e bata-os muito bem com uma vara de arames. O segredo está aqui, julgo eu. Aos poucos e enquanto bate, junte em fio a calda, batendo sempre energicamente entre cada adicionação da calda aos ovos, para não talhar. Coloque novamente no tacho. Deixe cozinhar em lume brando sem parar de mexer (este passo é extremamente importante!) até engrossar. Apague o lume antes de começar a ferver. Deixe arrefecer durante cerca de 10 a 15 minutos. Guarde em frascos que vedem bem. Depois de frio, guarde os frascos no frigorífico.
