Roasted Pork Loin & Peppers Tomato Rice

A succulent and super flavoured and spicy roasted pork loin with fragrant garlic, bay leaves and wine sided by a super-healthy rice dish with the distinctive flavour of tomato and red/ orange peppers mix is a great summer meal to have outside when you have invited friends over. Roasting a boneless pork loin roast slowly will guarantee moist, tender meat, plus I love mine to have the combination of juicy sweet meat inside and tooth-shatteringly crisp crackling on top. As for the rice,  it is so colourful that it kinf od resembles a Mexican meal. The rice takes on the warm essence of sweet peppers, onions, and garlic and tomato as they slowly simmer together and the result is a mix of flavours that will please the senses. Enjoy this wonderful meal this upcoming weekend!

Ingredients - Roast Pork Loin:
  •  boneless  pork loin
  •   garlic
  •   bay
  •   chili
  •   butter [Mimosa]
  •   extra virgin olive oil
  •   2 and 1/2 cups of white wine

Ingredients - Rice:

  •  long grain rice
  •  onion
  •  garlic
  •  tomato concentrate
  •  orange pepper
  •  red pepper
  •  extra virgin olive oil  
  •  water
  •  salt
  • 1 small chilli

Ingredientes - Lombo Assado:
  • lombo sem osso
  • alhos
  • louro
  • piri piri
  • manteiga [Mimosa]
  • azeite
  • 2 e 1/2 copos de vinho branco 
Ingredientes - Arroz:
  • arroz agulha
  • cebola
  • alho
  • concentrado de tomate
  • pimento laranja
  • pimento vermelho
  • azeite
  • água
  • sal
  • 1 malagueta pequena


  1. Arroz de pimentos é daquelas coisas que eu amooooooo de morte, fico sempre com um principio de indigestão quando como, mas quero lá saber, certo que só o como muito raramente, mas mesmo assim, como, encho a casa de água das pedras e pimbas eheheehh!!
