Very Berry Pie


I love cooking beautiful, tasty and easy pies during Spring and Summer time, usually to be accompanied by a dollop [or two] of ice cream on the side. This one, with red fruits is both sour and sweet and smells divine when is still warm. The colour richness, the intensity of the flavour and the use of minimum ingredients makes it perfect to become a regular at your table in the next sunshining weekends!

Ingredients:
  • 2 sheets of puff pastry 
  • strawberry jam
  • a packet of fresh/ foren red fruits
  • 1 egg +2 soup spoons milk for eggwash
  • sugar to sprinkle

Place one of the pie puff pastry sheet into the pie dish and pick the bottom with a fork. Cut the other pie puff pastry sheet into 3/4 inch strips. Put th jam in the pie dish with the puff pastry. Soon red fruits mix into the unbaked pie crust. Lattice the strips and roll the edges, using your knuckle to crimp the edges. Brush the top of the pie with the milk and the egg. Sprinkle with sugar and take it to a pre-heated ovenat 180º until golden.
