With the whirlwind of birthday parties that have been going on lately , the truth is that I have spent a lot of time in the kitchen experimenting with a variety of sweets which have long felt some curiosity about but didn't dare risking. This delicious , very fresh and aromatic lemon Swiss roll , which is very difficult to resist to or just stick with a single slice , was one of them . Although I already had eaten it countless times , it had never been made by me and , this time , it was one of my contributions to a casual family gathering and an absolute guarantee of success !
Ingredients:
- 8 large eggs
- 250g Sugar
- 50g flour
- 1 teaspoon of baking powder
- 125ml lemon juice
- 25g melted butter
- zest of 1 large lemon
- unsalted butter
- sugar
Turn the oven to 180 º C. In a bowl , mix the sugar with the flour , baking powder, lemon zest and juice . Add the eggs ,beat nicely so that they not turn into a foam. Before taking it into the oven , add the butter . Pour the mixture into a baking tray buttered and lined with parchment paper and buttered again . Bake for about 30 minutes. Check if it is cooked, remove from oven . Turn the tray gently over a cloth sprinkled with sugar and wrap the pie while it is still warm gently with the cloth, squeezing well . Let cool. Take it to the refrigerator to allow getting it cold and serve it cut into slices.
