Asparagus Frittata

Spring and asparagus has got to be one of the best combinations ever. A great way to enjoy the crunchy asparagus is sautéed with some onions and cooked up with eggs into an easy, quick and savory frittata where handful of mozarella cheese makes all the difffrence. This dish is so delicious and so ramarkably simple to make that you will come back to it again and again.

  • espargos
  •  5 ovos
  • sal q.b.
  • mistura de pimentas q.b.
  • 125gr mozzarella
  • 1 cebola
  •  azeite q.b.
  • 1 colher se sopa de manteiga
  • 1 pacote de natas
Lave muito bem os espargos e corte metade às fatias, deixando a outra metade inteira. Numa sertã salteie  a cebola num fio de azeite e junte depois os espargos. Numa taça, bata os ovos juntamente com um pacote de natas e tempere a gosto com sal e mistura de pimentas. Junte Depois o queijo. depois de retirar os espargos já escorridos de todo o azeite misture os que estão cortados nos ovos e leve ao lume numa sertão com uma colher de manteiga. Reserve os espargos inteiros. Depois da frittata estar cozinhada de um dos lados passe-a com cuidado para um prato, disponha os espargos inteiros no fundo da sertã antes de virar a frittata por cima para cozinhar do outro lado. Retire do lume e sirva quente.

  • asparagus 
  • 5 eggs 
  • sal q.s. 
  • mix of peppers q.s. 
  • 125gr mozzarella  
  • 1 onion 
  • olive oil q.s. 
  • 1 tablespoon butter 
  •  1 package cream

Wash the asparagus and cut half of them into slices, leaving the other half whole. In a frying pan sauté the onion in olive oil and then add in the asparagus. In a bowl, beat the eggs together with a package of cream and season to taste with salt and mixture of peppers. Then add the cheese.After removing the asparagus already drained of all the oil, mix those which are sliced into the eggs and let it cook  with a tablespoon of butter. Reserve the whole asparagus. After frittata is cooked on one of the sides put it gently on a plate, arrange the asparagus in the fryer  before turning the frittata over it to cook on the other side. Remove from heat and serve hot.
