Orange, Honey & Coconut Milk Cake


This was my birthday cake and it was made ​​with the basic ingredients that I had at home, done completely blindly, hoping that it would work, and I can assure you it was a good bet. At the end of the day the smell of homemade cake still flooded the kitchen deliciously. From time to time I like to concoct with what I have on hand, mixing ingredients as if I am making a magic potion, without really knowing if it will work or not, but actually I think I do it intuitively and with a slight sure that the selected ingredients will combine perfectly. I assure you that every bite will break out a sea of ​​flavours in your palate, fused, but concomitantly individualized. It's all there - the aroma of orange, the unmistakable tang of  coconut, the sweetness of honey, the freshness of the pineapple, the intensity of the mascarpone and the comforting lightness of white chocolate. More and more, cooking is an indelible pleasure.

 Ingredients:
  •  6 eggs
  • 1 can of coconut milk
  • 1 big orange (juice and zest)
  • 1 glass of Sunflower oil
  • 1 spoon of yeast
  • 500 gr flour
  • 250 gr sugar
  •  10 tea spoons honey
  • 2 packages of mascarpone cheese
  • 150gr powder sugar
  • 1 packet of cream 
  • 1 can of pineapple

 Combine the dry ingredients altogether [flour, yeast, sugar] and in a separate bowl, mix all the liquid ingredients [eggs, sunflower oil, zest and juice of the orange, honey]and beat until well combined. Then, add the whole can of the coconut milk to the liquid ingredients and beat again. Pour the liquid ingredients into the solid ones and beat until you get a very soft dough. Take to a pre heated oven at 180º for about 40m and check with a tooth pick.

 For the topping beat two packs of 150 gr mascarpone cheese and powdered sugar until very firm.


For the filling beat half a pack of cream with 3 tablespoons sugar cut 
the pineapple slicesto small pieces and spread them over the cake previously cut in half.



Este foi o meu bolo de aniversário e foi feito com os ingredientes base que havia cá em casa, completamente às cegas, na esperança que resultasse e posso assegurar que foi uma boa aposta. Ao final do dia ainda a cozinha cheirava deliciosamente a bolo caseiro. De vez em quando gosto de inventar com o que tenho  à mão, misturo ingredientes como se estivesse a fazer uma poção mágica, sem saber muito bem se vai dar certo ou não, mas na verdade, acho que o faço intuitivamente e com uma leve certeza de que os ingredientes selecionados vão combinar na perfeição. Garanto-vos que a cada dentada um mar de sabores eclodirá no vosso palato, fundidos, mas concomitantemente individualizados. Está lá tudo - o aroma da laranja, o travo inconfundível do côco, o adocicado do mel, a frescura do ananás, a intensidade do mascarpone e a leveza reconfortante do chocolate branco. Cada vez mais, cozinhar é um prazer indelével.

 Ingredientes:
  • 6 ovos
  • 1 lata de leite de côco
  • 1 laranja grande (sumo e raspas)
  • 1 copo de óleo de girassol
  • 1 colher de sopa de fermento
  • 500gr de farinha
  • 250gr de açúcar
  • 10 colheres de chá de mel
  • 2 embalagens de queijo mascarpone
  • 150gr de açúcar em pó
  • 1 pacote de natas
  • 1 lata de ananás

  Combine os ingredientes secos completamente [farinha, o fermento, o açúcar] e, numa tigela separada, misture todos os ingredientes líquidos [ovos, óleo de girassol, as raspas e o sumo da laranja, mel] e bata até misturar bem. De seguida, adicione a lata toda do leite de coôo aos ingredientes líquidos e bata novamente. Despeje os ingredientes líquidos para dentro da taça dos sólidos e bata até obter uma massa muito macia. Leve ao forno pré aquecido a 180 º cerca de 40m e verifique com um palito.


Para a cobertura bater duas embalagens de queijo mascarpone e 150 gr de açúcar em pó até ficar bem firme. 

Para o recheio bater meio pacote de natas com 3 colheres de açúcar, cortar rodelas de ananás aos pedaços pequenos e espalhar pelo bolo previamente cortado ao meio.
