I've always enjoyed Easter since I was a little girl! Usually it happens in April, which is also the month of my birthday and that means lots of edifying family gatherings [in other words chaos], bustle in the kitchen, lots of sweets and some gifts - from godparents, on Easter and from the rest of the crowd, on my birthday.I clearly remember that I was always beside myself with joy and excitement until that day came - yes, because often Easter and my birthday happened simultaneoulsy or were very close. This year I decided that I wouldn´t buy anything. I decided to get on with baking sweets for my home and for my parents', because they cannot do it any longer. It was a fun, cheerful, but also laborious and not always successful task [yes, I confess that it resulted in a total burnt up frying pan!]. As the recipes of the cakes are in the blog [here, here and here] with a few differences, I'll leave you with the suggestion of a typical Portuguese recipe for almonds that i did for the first time and that, although much appreciated, were as easy as eating soup with a fork! ;)
Ingredients:
- 750 gr of toasted almonds
- sugar
- water
- vanilla flavour
- powder chocolate
- a soup spoon of cinammon
To bake this you'll need a nonstick frying pan where you'll place both the sugar and the water [a 250 ml cup of each]to boil for about 4 minutes. I bought already toasted almonds because it's easier. After the water and sugar boils you add about three soup spoons of powder chocolate, a spoon of cinammon and some drops of vanilla flavour and blend well till it gets a bit thick [not much]. Then add the almonds [a cup for each portion] and over a low fire you keep on stirring until all gets granulated and adheres to the almonds. When you reach that point you put it on a pice of drafting paper and try to separate the almonds with a fork. Then just let them cool down and bon apétit!!!
Sempre gostei muito da Páscoa desde pequena! Normalmente calha em Abril, que é também o mês do meu aniversário e isso representa muitas reuniões de salutar convívio familiar [leia-se confusão], azáfama na cozinha, muitos doces e algumas prendas - por parte dos padrinhos, na Páscoa e dos restantes, no aniversário. Lembro-me perfeitamente de como não cabia em mim de contente e de agitação até esse dia chegar - sim, porque algumas vezes essas duas datas aconteciam em simultâneo ou mesmo muito próximas uma da outra. Este ano decidi não comprar nada, como costumava fazer. Meti mãos à obra e fiz os doces para minha casa e para casa dos meus pais, que já não podem fazê-lo. Foi uma aventura divertida, prazenteira, mas também árdua e nem sempre bem sucedida [sim, confesso que houve uma sertã carbonizada!!!]. Como as receitas dos bolos estão no blog [aqui, aqui e aqui] com algumas pequenas nuances diferentes, deixo-vos aqui a sugestão de amêndoas de torrão que fiz pela primeira vez e que, embora muito apreciadas, me deram água pela barba [salvo seja ;)]!
Ingredientes:
- 750 gr de amêndoas torradas
- açúcar
- água
- aroma de baunilha
- chocolate em pó
- uma colher de sopa de canela
Para cozinhar estas amêndoas precisas de uma frigideira anti-aderente onde colocas o açúcar e a água [uma caneca de 250 ml de cada ] e deixas ferver cerca de 4 minutos.Eu já comprei amêndoas torradas porque é mais fácil. Depois de ferver a água com o açúcar, juntas cerca de 4 colheres de chocolate em pó , uma colher se sopa de canela e algumas gotas de aroma de baunilha e mistura-se bem até engrossar um bocadinho [mas não em demasia]. De seguida acrescenta-se as amêndoas [um copo para cada porção] e, em lume brando vai-se mexendo bem tudo até que a mistura fique granulada e se agarre às amêndoas. Quando chegamos a este ponto,
coloca-se sobre papel vegetal e separam-se as amêndoas com um garfo. Depois é só deixar arrefecer e bon apétit!

For Easter I prepare the Napolitan Pastiera, but where I live the traditional cakes like yours are a must. My husband prepares the traditional fish of "pasta di mandorla" similar to yours masterpieces: it's a hard work but with gougers and marvelous results!
