Apple & Nuts Crumble

Cinnamon-spiced apples baked with a sweet  golden crumble topping are the perfect side dish for a big scoop of ice cream on a hot summer night. The ideal treat for Sunday lunch, this apple and nuts crumble recipe is quick and easy to make and it'll be a star at your table, since the nubbly crunch of toasted walnuts adds a new dimension to the classic crumble. A great dessert for parties and easy enough for a weeknight dessert indeed.

Ingredients:
  • 1 kg of peeled and sliced apples into pieces
  • 50g butter
  • 50g sugar
  • 100gr walnuts
  • Juice of 1 lemon
  • 2 cinnamon powder teaspoons
  • 175g butter, softened
  •  300g unleavened wheat flour
  •  200g Sugar

In a frying pan, bring to the heat 50g butter and 50g sugar. Stir and let it melt. Add the apple, lemon juice and cinnamon. Mix and let sauté over high heat for 5 minutes. Meanwhile, in a bowl, place the flour, sugar 200g and 175g butter. Knead until it is a grainy mass. In a  tray, place the apple on the bottom and spread the granulate on top. Take to the preheated oven at 210 ° C for about 25 minutes. When the dough is cooked on top and with a golden hue it is ready.Serve warm.


Ingredientes:
  • 1 kg de maçãs descascadas e cortadas em pedaços
  • 50g de manteiga
  • 50g de açúcar
  • 100gr nozes
  • Sumo de 1 limão
  • 2 colheres de chá de canela em pó
  • 175g de manteiga amolecida
  • 300g de farinha de trigo sem fermento
  • 200g de açúcar

Numa frigideira, leve ao lume os 50g de manteiga e os 50g de açúcar. Mexa e deixe derreter. Junte a maçã, o sumo de limão e a canela.  Misture e deixe saltear em lume forte durante 5 minutos. Entretanto, numa tigela, coloque a farinha, os 200g de açúcar e os 175g de manteiga. Amasse até que fique uma massa granulada. Num tabuleiro de ir ao forno, coloque a maçã no fundo e espalhe o granulado por cima.Leve ao forno pré-aquecido a 210º C cerca de 25 minutos. Quando a massa por cima estiver cozida e com um tom dourado está pronto. Servir quente.

Homemade Physalis Jam

Physalis abound in our farm and they are one of my favourite summer fruits. Physalis fruit have a definite sweet taste when ripe, but preserve a slightly acidic/ sour aftertaste that I simple love. Rich in antioxidants, a good source of vitamins A, B and C and carotenoids this fruit is also rich in other nutrients that contribute to our dietary needs. The jam, strongly aromatic and  with a golden colour is absolutely divine and soon became part of my daily summer breakfast routine.


Ingredientes:
  • 2 kg physalis
  • 1 kg sugar
  • 2 cinammon sticks
  • juice of 1/2 lemon
Prepare the physalis by removing outside husk or covering and wash them. Put the sugar in a big pan and place the physalis on top and mix well with a wooden spoo. Bring to boil and add a bit of water, 2 sticks of cinammon and the juice of sugar and the lemon juice and boil for 10 minutes. With a wooden spoon mix all once in a while  and continue boiling till a little will set when tested. Pour into prepared jars and seal.

I had been in search of the perfect glamorous straw bag for summer nights out/ weddings and I've finally found it on sales at Tous this month! The gold details make it polished and the airy, laid back feel it conveys  makes me dream of a French Riviera eclectic style. Isn't this one pretty darn sweet?
