Lemonade & Raspberry Cake


The perfect recipe for oppressive days that have been going on continuously in a very scorching summer that invites to lightness and freshness may well be this one -  a lemonade cake with raspberries served after having been in the fridge for a couple of hours - the ideal combination to combat the heat, quench gluttony and refresh friends!


Ingredients:

  •  2 mugs flour
  •  yeast
  •  1 mug sugar
  •  2 or 3 large lemons (juice)
  •  zest of a small lemon
  •  4 eggs
  •  1/4 cup of sunflower oil
  •  raspberries

Squeeze the lemons and reserve the juice. Take the zest of a lemon and reserve. Beat the cup of sugar with 1/4 cup of sunflower oil. Add 4 eggs, one at a time, and always beating between each one. In a bowl, separately, softly mix the flour, the baking powder and the lemon zest. Pour the prior mix into the bowl of the dry ingredients. Add the juice of the lemons and beat well. Pour the dough into a square mold, greased with butter and dusted with flour. Distribute the raspberries in the dough in the most symmetric way as possible. Take it to a preheated oven at 180 º for about 30 minutes (do the toothpick test). Allow to cool completely before taking it tothe refrigerator as long as desired - optional. Cut into small squares and serve chilled!




A receita perfeita para os dias opressivos que se têm feito sentir, num verão muito abrasador e que convida à leveza e à frescura pode muito bem ser esta -  a de um bolo de limonada com framboesas, servido depois de ter estado previamente algum tempo  no frigorífico -  a combinação ideal para combater o calor, saciar a gula e refrescar os amigos!

Ingredientes:
  • 2 canecas farinha
  • fermento
  • 1 caneca açúcar
  • 2 ou 3 limões grandes (sumo)
  • raspa de um limão pequeno
  • 4 ovos
  • 1/4 chávena de óleo de girassol
  • framboesas
Espremer os limões e reservar o sumo. Raspar um limão e reservar. Bater a caneca de açúcar com 1/4 da chávena de óleo. Juntar os 4 ovos, um a um, e bater sempre entre cada um. Numa taça, separadamente, envolver a farinha, o fermento e a raspa do limão. Verter o preparado anterior para a taça dos ingredientes secos. Adicionar o sumo dos limões e bater bem. Deitar a massa numa forma quadrada, previamente untada com manteiga e polvilhada com farinha. Distribuir as framboesas pela massa de forma o mais simétrica possível. Levar a forno pré aquecido a 180º cerca de 30 m (fazer teste do palito). Deixar arrefecer totalmente antes de levar ao frigorífico o tempo que desejar - facultativo. Cortar em pequenos quadrados e servir bem fresco!
