Spicy Stewed Rabbit

Rabbit only needs a few ingredients to be transformed into a delicious one-pot meal, perfect for fall or winter or for dull weather as this week's forecast  of rain and temperatures dropping. Succulent chunks of rabbit are slowly stewed in a richly flavoured spicy sauce that's perfect to be served with boiled potatoes or vegetables, rice, French fries or, in this case, toasted bread. A delicious hearty dinner for a chilly evening.

Ingredients:
  • 1 rabbit
  • 3 onions
  • 4 cloves of garlic
  • 1 packet of tomato concentrate
  • a drizzle of olive oil
  • 5  chilis
  • 1 bay leaf
  • 2 cups red wine
  • 1/2 a cup white wine
  • 1 cup eater
  • salt
In a pan put the onions  cut in slices and the minced garlic and add the extra virgin olive oil. Let it heat a bit and then add the tomato, the bay leaf, the chilis and season with salt. Stir and let cook for a bit. Add the chopped rabbit and mix it in the sauce. Add the wines and the water and let cook for about 45minutes, until the meat is super soft and tender. Then toast the bread and display it in a plate and serve the rabbit on it.
