Chickpea & Codfish Salad


Although very simple and economical for me it is always a treat to savour this salad, hot or even cold in synny weather days. Ideal for lazy days where everything when one feels like anything but turn on the oven and bake very elaborate dishes and this practical and tasty recipe is more than enough to satisfy the palate of those who appreciate good Portuguese flavors or who are willing to try them out!


Apesar de muito simples e económica para mim é sempre um deleite saborear esta salada, quente ou até mesmo fria, nos dias de muito calor. Ideal para os dias de preguiça em que apetece tudo menos ligar o forno e fazer pratos muito elaborados esta prática e saborosa receita é mais do que suficiente para satisfazer o palato daqueles que apreciam sabores bem portugueses ou dos que têm vontade de os experimentar!



Ingredients:
  • a jar of chickpea
  • 4 eggs
  • codfish
  • onion
  • parsley
  • black olives
  • extra virgin olive oil
Start by boiling the eggs previously and then add the chickpea jar and the codfish and let cook.  Then remove the codfish and take out all the spines. In a separate bowl mix chopped onion with chopped parsley and olive oil. Mix everything together.
