Orange Zest Swiss Roll & "Doce de Ovos" Filling

Portuguese confectionery is full of delicious flavors like the traditional "doce de ovos". Although this has not been done for me, due to absolute lack of time, the method of its making is the traditional one, proving itself being actually very good. If you are such a sweet tooth as myself, this sweet and extremely tasty Swiss roll with a pleasant scent of orange and a slightly citrus flavor is the ideal treat to put on the tea-time table.

Ingredients:

  • 6 eggs
  • zest of 1 orange
  • orange juice 1/4
  • 200gr sugar
  • 200g flour
  • "doce de ovos" custard

Separate the yolks from the whites and whisk the egg whites. Reserve the whisked egg whites. Whisk the egg yolks with sugar and the zest of the orange.
Afterwards add 1/4  the juice of the orange and whisk again. Add the flour and whisk, then involving the whisked egg whites. Pour it over a tray lined with non-stick baking paper and take it to bake at 190 ° C for 15 minutes. Remove from oven and turn it on a clean kitchen cloth, sprinkled with sugar. Spread the cake generously with the "doce de ovos" custard. Wrap carefully with the help of the cloth sprinkled with sugar, squeezing well. Allow to cool.

Reserve as claras . Deixe arrefecer.
