Almonds, Apple & Nuts Cake

Yesterday was my sister's birthday and we had an intimate family get-together to celebrate it. I brought in this delicious cake  -the ground almonds lent a wonderfully moist texture to this cake and at the same time, you could taste and smell of almond and apple too.It was so simple to make and packed with a sweet, tangy apple/ lemon flavour which was a very, very good thing indeed. I can safely say that this lovely cake became a firm favourite of mine.


Ingredients:
  • 200gr almond flour
  • 200gr flour
  • 200gr brown sugar
  • 6 eggs
  • 1/2  cup Sunflower oil
  • zest of 1 lemon
  • 2 apples
  • nuts
  • juice of 1 lemon
Whisk the egg whites until stiff and set aside. Cut the apples into thin slices, sprinkle with brown sugar and water with lemon juice. Keep it. In a bowl beat the egg yolks with the brown sugar and the lemon zest. Add the sunflower oil and beat again. Add the almond flour and the other flour 3 times and stir well with a wooden spoon. Finally, gently fold in the previously whisked egg whites. Place the dough in a square mold lined with parchment paper and smeared with butter. Add the apple slices and walnuts to taste. Take the dough to a preheated oven to 180 degrees and leave for about 45-50m.


Ingredientes:
  • 200gr miolo de amêndoa
  • 200gr farinha
  • 200gr açúcar mascavado
  • 6 ovos
  • 1/2 caneca de óleo girassol
  • raspa de 1 limão
  •  2 maçãs
  • nozes
  • sumo de 1 limão
Bater as claras em castelo e reservar. Cortar as maçãs às fatias finas, polvilhar com açúcar mascavado e regar com sumo de limão. Reservar.  Numa taça bater as gemas juntamente com o açúcar e a raspa do limão. Adicionar o óleo e bater de novo. Juntar o miolo de amêndoa e a farinha por 3 vezes e mexer muito bem com uma colher de pau. Por fim, adicionar levemente as claras em castelo.Deitar a massa num tabuleiro quadrado forrado com papel vegetal e untado com manteiga. Adicionar as fatias da maçã e as nozes a gosto.  Levar ao forno pré aquecido a 180º e deixar cerca de 45-50m.
