Pumpkin "Velhoses" - Childhood Memories #8


There's no treat in the world that reminds me better of Christmas than my Aunt Fernanda's pumpkin "velhoses" , the best in the world , I dare say! This simple recipe is my adaptation of many other old recipes that were in the past transmitted  mouth to mouth and although very tasty, they still are not "the ones" . Those , I hope to bake them next Christmas with the help of my aunt who makes them, from what I recall, with an ineffable aroma and flavor! I distinctly remember the weeks that preceded the holiday season when I would be in a frenzy awaiting to eat her pumpkin "velhoses" gluttonily and of putting some wrapped in paper napkins that barely could stand that wonderful syrup in my overall's pocket. If you stillfeel like it try these that are also delicious accompanied by a whole pot of tea on this cold and rainy January !

Ingredients:

  • 1.5 kg pumpkin
  • lemon peel
  • 3 cinnamon sticks
  • 6 whole eggs
  • zest and juice of 2 or 3 oranges
  • zest of 1 lemon
  • 1 cup of brandy
  • 1 spoon ( tea ) ground cinnamon
  • 1kg flour
  • 50g of baker's yeast
  • sugar and cinnamon for sprinkling

In a pan put the pumpkin cut into pieces . Join the peel of a lemon and 3 cinnamon sticks. After the pumpkin
is well-cooked  , takeaway the cinnamon sticks and the lemon peel. Drain the pumpkin very well and with a blender transform it into puree. Mix in the eggs , the zest of the oranges and of the lemons , the juice of the oranges , a cup of brandy , cinnamon , flour and baker's yeast (previously melted in hot water ). Mix everything well until the dough is very elastic in our hands.Cover the pan , wrap it in a blanket and let the dough rise for about 30 minutes , close to the fireplace/ heater . Fry in hot oil ,with the help of two soup spoons and allow to get a golden colour. Let them drain well on absorbent paper. Sprinkle the "velhoses" with a mixture of sugar and cinnamon powder.


Não há para mim iguaria que me lembre mais o Natal do que os doces velhoses de abóbora da minha Tia Fernanda,  os melhores do mundo, atrevo-me a dizer! Esta minha singela receita é uma adaptação de muitas outras receitas antigas que vão sendo passadas de boca em boca e ficaram muito saborosos, mas não são "aqueles". Esses, espero fazê-los no próximo Natal com a ajuda da minha tia que os faz, desde que me lembro de ser gente, com um aroma e sabor inefáveis! Lembro-me perfeitamente das semanas que antecediam a época natalícia de já andar num frenesim à espera dos velhoses de abóbora, de os comer glutonamente e de esconder alguns no bolso embrulhados em guardanapos de papel que mal aguentavam aquela calda maravilhosa. Se ainda vos apetecer atrevam-se com estes que também são deliciosos acompanhados de um bule inteiro de chá neste janeiro gélido e chuvoso!


Ingredientes: 
  • 1,5 kg de abóbora
  • casca de limão
  • 3 paus de canela
  • 6 ovos inteiros
  • raspa e sumo de 2 ou 3aranjas 
  • raspa de 1 limão
  • 1 cálice de aguardente
  • 1 colher (de chá) de canela em pó
  •  1 kg. de farinha
  • 50 g de fermento de padeiro
  • açúcar e canela para polvilhar

Num tacho coze-se a abóbora cortada aos pedaços. Junta-se a casca de um limão e os 3 paus de canela . Depois de a abóbora bem cozida, retiram-se os paus de canela e a casca de limão. Escorre-se muito bem e vai à picadora até ficar em puré.  Junta-se os ovos inteiros, a raspa das laranjas e dos limões, o sumo das laranjas, o cálice de aguardente, a canela,  a farinha e o fermento (previamente desfeito em água quente ). Amassa-se tudo muito bem até a massa ficar  bem elástica nas nossas mãos.Tapa-se o tacho, embrulha-se numa manta e deixa-se levedar durante 30 minutos, perto da lareira ou do aquecedor. Frita-se em óleo bem quente, coma a juda de duas colheres e deixa-se alourar a gosto. Deixa-se escorrer bem sobre papel absorvente. Polvilham-se os velhoses com uma mistura de açúcar e canela em pó.
