Carob & Bananas Pancakes
I tried carob flour for the first time the other day and was amazed at how much it surprised me. I was really impressed with its taste - a mixture between chocolate and caramel with a slight hint of coffee, but I must admit that the first two pancakes went straight into the wastebin because I couldn't bind the dough. That's when I decided to add a bit of oatmeal flour and then it was just perfect! Incredibly simple and deliciously fluffy this recipe with Greek yoghurt and red berries toppingis is a "fruity-licious" breakfast and a real treat - and an healthy one!
Ingredients:
[each portion makes 4 - I made 2 batches of the recipe]
- 1 big ripe banana
- 3 tablespoons carob flour
- 2 tablespoons oatmeal flour
- 2 eggs
- butter to grease the pan
- 1/2 a Greek yoghurt
- red fruits
Crush the ripe banana with a fork and set aside. Place the oatmeal and carob flours in a bowl, add 2 eggs and the crushed banana and beat all with the mixer. Grease the pan with a little bit of butter and make the pancake.
Ingredientes:
[cada porção faz 4 - fiz 2 doses]
- 1 banana grande madura
- 3 colheres de sopa de farinha de alfarroba
- 2 colheres de sopa de farinha de aveia
- 2 ovos
- manteiga para untar
- 1/2 iogurte grego
- frutos vermelhos
Pisar
a banana madura com um garfo e reservar. Colocar as farinhas de aveia
e alfarroba numa taça, juntar 2 ovos e a banana esmagada e bater tudo com a
batedeira. Untar a frigideira com um pouco de manteiga e fazer a
panqueca.

I've never heard of carob flour, I don't know if you can get it in the UK but it sounds nice, These pancakes look amazing, you definitely have some great recipes! XxxX
