Honey & Lemon Cake
Don't you just love a piece of rustic cake with a good cup of tea when it's raining cats and dogs outside? Well if you're anything like me you'll love this simple but really flavourful cake, golden brown and slightly crispy on the outside, bright yellow and fluffy on the inside,. Infused with the tastes of honey and the super tasty, fragrant and tangy biological lemons from my parents' farm [ lemons always make me think of summer, no matter what the weather is doing outside] is a true delight you'll experience, so simple and easy and though the perfect balance of sweet and tart.
Ingredients:
- 4 eggs
- 175 g of wheat flour
- 150g of brown sugar
- zest of 1 lemon
- juice of 1 lemon
- 1 teaspoon baking powder
- 5 tablespoons of honey
Preheat oven to 180ºC. Grease a round cake mold with hole in the middle with butter and sprinkle with flour. In an electric mixer, beat the eggs with the sugar and lemon zest until you get a homogeneous mixture. Then addthe lemon juice and the honey and beat for about 3 minutes. Reduce to low speed, add the flour mixed with baking powder and beat until the mixture is creamy. Pour the dough into the mold and bake forabout 30-40 minutes in a pre heated oven at 180º. Poke a toothpick in the middle and it comes out dry, the cake is cooked. Remove the cake from the oven and unmold it when it's cooled.

- 175gr de farinha de trigo
- 150gr de açúcar mascavado
- Raspa de um limão
- Sumo de um limão
- 1 colher de chá de fermento em pó
- 5 colheres de sopa de mel
Pré-aqueça o forno a 180ºC. Unte uma forma de bolos redonda com furo
no meio com manteiga e polvilhe com farinha. Numa batedeira eléctrica, bata os ovos juntamente
com o açúcar e a raspa de limão até obter uma mistura homogénea. De
seguida, adicione o sumo de limão e o mel e bata cerca de 3
minutos. Reduza para a velocidade mínima, adicione a farinha misturada
com o fermento em pó e bata até ficar uma mistura cremosa. Deite o preparado na forma e leve ao forno cerca de 30-40 minutos no forno pré aquecido a 180º. Espete um palito no meio e, se sair seco, o bolo
está cozido. Retire o bolo do forno e desenforme quando tiver arrefecido.
Adoro este tipo de bolo com aspecto bem caseiro e simples, é tão bom!
