Taking a stroll through the surrounding nature is one of my favourite activities during spring and summer days. As an anxious person by nature whose stress levels are usually very high I find it both soothing and rumination-free. Fresh air is good not only for the lungs and the skin, but also great for the brain, for it puts my mind at ease and I am finally able to embrace who I am and find myself to feel fully relaxed in this rapidly urbanizing world of ours.

Cheese, Bacon & Black Olives "Bola"
Super easy and delightfully tasty this rich and savory salty cake is great either as aperitif, to bring along for a spring picnic, as a quick lunch fix at work or to serve at a relaxed dinner with friends. Packed with olives, cheese and bacon it's a great mix that tastes deliciously while it gets combined in our mouths. A nice suggestion for the upcoming weekend just around the corner.
Ingredients:
- 200gr bacon
- black olives
- Flemish cheese
- 3 eggs
- 2 flour mugs
- 1 teaspoon baking powder
- 1 cup milk
- 1/2 cup extra virgin olive oil
- qs salt
Crack the eggs into a bowl and Whisk them. When the eggs are fluffy and bulky add the milk and oil and beat again. Add the flour and baking powder and beat until everything is well blended. Season the dough with salt. Mix well with a spoon. Add cheese, bacon and pitted and sliced olives. Mix it well. Place the dough in a mold, greased with butter and dusted with flour. Bake in preheated oven at 180ºC and cook for about 30-40 minutes. After the cake is cooked, remove from the oven and let cool before unmolding it.

- azeitonas pretas
- queijo flamengo
- 3 ovos
- 2 canecas de farinha
- 1 colher de sopa de fermento em pó
- 1 chávena de leite
- 1/2 chávena de azeite
- Sal q.b.
