Spicy Fried Rabbit & Sauté Spinaches


I love the taste of rabbit meat, but I am also very fond of the rabbit as the animal itself , so eating rabbit has always been very conflicting in terms of feelings to me and that's why I cook it so seldom. First of all I have to buy it already prepared and the head is never to be seen once I bring it home from the butcher. Then, after I have overpassed this point of regret and guilt, I put my hands at work and start prepare a deliciously awesome dish that also looks fingerlicking good.

Ingredients:
  • a rabbit
  • two onions
  • garlic cloves
  • white wine
  • chilli
  • extra virgin olive oil 
  • tomato sauce
  • spinaches
In a frying pan put the onion and garlic, chopped in slices to caramelize. Add 4 soup spoons full of tomato sauce and stirr. Add the rabbit and season with salt mixing it with the sauce of the pan. Then add a glass of white wine, cover the frying pan and let cook until the meat is soft and easily separates from the bone.In a separate pan sauté the spinaches in extra virgin olive oil and garlic and serve hot.
